SALMON SALAD LOAF WITH CAPER
SAUCE
 
1 (16 oz.) can salmon, drained, flaked & bones removed
1 c. Saltine crackers, crushed
1/4 c. pickle relish
2 eggs, slightly beaten
1/3 c. milk
1 tbsp. prepared mustard
1 tbsp. lemon juice

Thoroughly combine salmon, cracker crumbs, relish, eggs, milk and lemon juice. Form into loaf. Bake in 9 x 5" loaf pan covered with plastic wrap. Vent wrap. Bake in microwave on full power for 8 to 9 minutes. Give dish a half turn once during cooking time. Let stand 5 minutes. Serve with caper sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
