SALMON LOAF WITH PIQUANT SAUCE 
1 can salmon
1/2 c. bread crumbs
1 c. soft bread crumbs
1/2 tsp. salt
1 tsp. lemon juice
1/2 c. evaporated milk
1/4 c. reserved liquid from salmon
1 tsp. fresh parsley
2 tbsp. minced onion
1 egg
1/8 tsp. dry mustard

SAUCE:

2 tbsp. shallots
3 tbsp. butter
2 tsp. flour
1/2 tsp. dry mustard
1/2 tsp. salt
Freshly ground pepper
1 1/4 c. milk
1 tsp. Worcestershire sauce

Sort over salmon and remove any bones. Mince onion, chop parsley. Beat egg. Add all ingredients and mix in bowl. Shape into loaf pan and bake for 35 minutes at 375 degrees.

SAUCE: In a pan, saute shallots in butter. Blend in flour, mustard, salt and pepper. Add milk and Worcestershire sauce and cook. Stir until bubbly and thick. Serve over salmon loaf. Preparation Time: 15 minutes.
