PACIFIC SALMON LOAF AND CUCUMBER
SAUCE
 
1 (16 oz.) can salmon, drained and flaked
1/2 c. dry bread crumbs
1/2 c. mayonnaise
1/2 c. chopped onion
1/4 c. chopped green pepper
1 egg, beaten
1 tsp. salt

Combine ingredients. Mix lightly. Shape into loaf in shallow baking dish. Bake at 350 degrees for 40 minutes. Serve with cucumber sauce.

CUCUMBER SAUCE:

1/2 c. mayonnaise
1/2 c. sour cream
1/2 c. finely chopped cucumber
2 tbsp. chopped onion
1/2 tsp. dill weed

Combine all ingredients. Mix well. Serve with salmon loaf.

Makes 6 to 8 servings.

Thanks for sharing this recipe! A big hit in my home! I did swap the green peppers for celery, and used crushed soda crackers for the bread crumbs, so cut back on the salt too. The cuke' sauce was light and complemented the salmon loaf very nicely. I would serve this sauce as a fresh veggie dip too, it was so good. I didn't have sour cream, so substituted plain yogurt, and did season with a bit of S&P.
