SALMON LOAF & SAUCE 
1 can salmon, squeezed dry and rubbed with 2 tbsp. butter
1/4 c. cream
1/2 tsp. salt
2 eggs, beaten lightly
3/4 c. crumbled soda crackers
1 tbsp. finely chopped celery
Pinch of cayenne pepper

Line top of buttered double boiler with waxed paper. Combine above ingredients and pack mixture lightly into double boiler. Cover and steam for one hour.

SAUCE:

2 tbsp. butter, melted
1/4 tsp. salt
2 tbsp. flour
1 c. milk, added all at once

Cook sauce over low flame stirring constantly until thickened. Remove from heat and add 4 tablespoons ketchup. Unmold salmon loaf on warm platter. Pour sauce over and garnish with parsley. Serves 4 or 5.
