UNCLE'S CORN BREAD 
1 1/2 c. white cornmeal
6 tbsp. enriched flour
6 tbsp. sugar
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg
2 tbsp. butter or bacon drippings
1 tsp. baking powder

Sift dry ingredients into bowl. Add buttermilk and egg, stirring until combined. Melt drippings or butter in iron corn stick pans and add to the batter. Pour batter into hot corn stick pans. Bake in very hot oven, 450 degrees for 20 to 25 minutes.

All measurements are level. The pans are greased by putting the butter or drippings into pans and placing in the oven.
