“PINEAPPLE UPSIDE DOWN CAKE” IS IN:

PINEAPPLE UPSIDE DOWN CAKE 
1/4 cup (1/2 stick) butter (for pan)
1/2 cup packed brown sugar
1 cup cake flour
1/2 cup sugar
1 tsp. baking powder
1/4 tsp. salt
1/4 cup (1/2 stick) butter, softened
1/2 cup milk
1 egg
1/2 tsp. vanilla
1 can pineapple slices in syrup
maraschino cherries (as many as pineapple slices used)

Use an 8-inch square or round pan. Drain can of pineapple, saving the syrup.

Place butter in 8-inch pan, melt in the oven while preheating to 375°F.

Sprinkle brown sugar over melted butter. Arrange whole pineapple slices and cherries (with cherries in centers of pineapple slices) over the brown sugar in pan. Cut some of the remaining pineapple slices into half circles, then line the sides of the pan with them (standing up).

In a bowl, combine cake flour, sugar, baking powder, salt, softened butter, milk, egg, vanilla and 2 tablespoons of the pineapple syrup.

Pour batter into the pan being careful not to disturb the pineapples and cherries.

Bake at 375°F for 30 to 35 minutes or until cake is golden and has pulled away from the edges slightly.

Remove from oven and allow to stand for a few minutes to set and then turn it upside down onto a serving dish. Serve while still warm.

This recipe was so easy, I have been teaching my 11 yr. old daughter how to cook and she put her twist on this recipe. Alysha likes using fresh cut pineapple slices instead of canned & NO EGGS! Instead of milk she uses juice. This taste so amazing and I am Very Proud of My Daughter.

Great cake, but I would double the batter part, since its pretty flat if not. Came out of my iron skillet perfectly and even looked as pretty as it tasted good!

First, great recipe! My partner said the cake was better than her mother's favorite pineapple upside-down cake. Instead of using canned pineapple, I used a nicely ripe fresh pineapple and use the juice to replace the syrup. Not I was trying to be fancy, just I happened to have a pineapple at home and did not know what to do about it.

Great recipe! My husband grew up on his grandmother's cooking and absolutely loved this cake! I melted the butter in the microwave and added the brown sugar and then poured in the pan before adding the pineapple. I also doubled the recipe because I used a 9x13 pan and needed more mixture.

This cake was great! I loved the fact that i didn't have to use the yellow cake from the box! I used the pineapple juice from the can in place of some of the milk. I also used a little less butter and brown sugar for the pineapple part to make myself feel better about making a treat and it was DELICIOUS! Great recipe..
