ORANGE ZUCCHINI CAKE | |
1 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 3/4 c. sugar 1/2 c. oil 2 beaten eggs 1 1/2 c. All Bran cereal 1 1/2 tsp. grated orange peel 1 tsp. vanilla 1 c. grated zucchini 1/2 c. chopped nuts Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside. In large bowl, beat sugar, oil and eggs until well combined. Stir in cereal, peel and vanilla; add flour mixture, zucchini and nuts. Mix well. Spread evenly in greased 10 x 6 x 2 inch baking pan. Bake at 350 degrees for 35 minutes or until toothpick comes out clean. Spread Orange Cream Cheese Frosting. ORANGE CREAM CHEESE FROSTING: 1 (3 oz.) pkg. cream cheese, softened 1 tbsp. butter, softened 1/2 tsp. grated orange peel 1 1/2 c. sifted confectioners' sugar Milk if needed In small mixing bowl, beat cream cheese and butter until light and fluffy. Gradually add sugar, beating until fluffy and of spreading consistency. If too thick, add milk. |
