4 c. grated zucchini
1 onion, grated
2 tbsp. biscuit mix
1/2 c. grated cheddar cheese
2 beaten eggs
Salt and pepper to taste

Heat pan and add oil; put a tablespoon of zucchini mixture into pan and brown on both sides. Serve with butter or syrup.
