CARROT BARS AND CREAM CHEESE
FROSTING
 
4 eggs, beaten
2 tsp. baking soda
3/4 tsp. salt
2 c. flour
2 c. sugar
1 1/4 c. cooking oil
3 tsp. cinnamon
3 jars baby food strained carrots

FROSTING:

2 c. powdered sugar
8 oz. cream cheese
1 stick butter
2 tsp. vanilla

Mix eggs and sugar. Add cooking oil, stir. Add cinnamon, salt, soda, carrots; stir. Add flour gradually; mix with spoon, not an electric mixer. Grease large cookie sheet. Bake at 350 degrees for 25-30 minutes.

FROSTING: Blend butter and cream cheese. Add vanilla and gradually stir in powdered sugar.
