GREEN TOMATO BREAD 
1 c. cooking oil
3 eggs, beaten
2 c. sugar
2 tsp. vanilla
2 c. ground green tomatoes
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1/4 tsp. cloves
1/4 tsp. nutmeg
2 tsp. cinnamon

Beat eggs and add oil, sugar, vanilla and green tomatoes. Beating well together. Mix together dry ingredients and add to first mixture. Pour batter into two greased and sugared loaf pans or tube or bundt pan.

Bake at 325 degrees for 1 hour or until done. May use some tomatoes and some apples or crushed pineapple or use chopped apples or pineapple instead of tomatoes.

I made this yesterday with all green tomatoes and it is wonderful. I used a Bundt pan since I don't have 2 loaf pans the same size and it was done in 1 hour. The bread has a nice fine texture, moist and flavorful with a delicately crisp crust. Everyone loved it.
