EASY EGGPLANT 
Eggplant, peeled and cut into 3/8 inch slices
Mayonnaise
Lemon pepper
Parmesan cheese

Coat each side of eggplant with mayonnaise and dust with lemon pepper and Parmesan cheese. Place on Teflon coated pan and bake at 450 degrees for 8 to 10 minutes. Serves 2 slices per person. Serve immediately. Easy.

This is probably the BEST quick, easy and HEALTHY eggplant recipe I have ever prepared. I am sending it to all my friends. The only thing I changed was to flip the eggplant after about 7 minutes so that it would brown on both sides.

Tastes good but I did not find it too easy. The preparation was very messy. A great deal of the leavings from the dish stuck to my pan even though I coated it. It also took longer for mine to get done. I ended up baking it about 15 minutes. My family did enjoy it though.

Could be really good but was very salty. I then noticed that the brand of lemon pepper I bought has a main ingredient of salt. Minus the salt would be very good and it does burn onto the pan a bit so next time I may line it with foil for easy cleanup.

I am not much of a cook, but this was really easy and very tasty. I omitted the lemon pepper because I do not like it, and it was still very flavorful. I will definitely make it again!

Added chili pepper, cumin, and a little salt after cooked. DO NOT FLIP, it burns the cheese and makes it stick. very simple and tasty.

I just made this for my family. I've never made eggplant before. I think I used too much lemon pepper, but I'm loving this! I like the lemony whang, and the mayo and Parmesan give it a saltiness.... Yum. Thanks!!

Had eggplant past prime, but hated to throw out. Looked for EZ recipe and found this. Cut the thickness they say and pop in oven. DELICIOUS. Will be buying eggplant more frequently. Going to make for a covered dish at my home this fall. We love grilled amd fried green tomatoes but this tops that. Will like to see what others say.

Normally, I do not comment on recipes with my changes. But here I see concerns about too salty and burnt pans.. Suggestions : make your.own lemon pepper. Zest 2 lemons, add fresh cracked pepper to taste. Eliminates over salting. Add lemon pepper and Parmesan to mayonnaise, spread on eggplant slices, eliminates messy prep. Press into bread crumbs on both sides. Lightly grease a sheet of parchment and line a rimmed cookie sheet with it. Eliminates dirty pan. Bake 6 minutes. Flip. Bake until browned...
