SPINACH CON QUESA (EASY DIP) | |
1 (10 oz.) pkg. frozen chopped spinach thawed 1 lb. process cheese with mild jalapeno peppers, cut into cubes 1/2 c. milk 1 sm. onion, diced 1 (2 oz.) jar diced pimento, drained 1 med. tomato, diced Press moisture from spinach in paper towels and set aside. Combine cheese, milk, onion and pimento in top of double boiler. Bring water to a boil. Reduce heat to low; cook until cheese melts. Add spinach, tomato. Serve warm with tortilla chips. Makes 2 cups. |
