LEMON BARS DELUXE
2 c. flour
1/2 c. powdered sugar
1 packet True Lemon, divided (optional)
1 c. butter
4 eggs, well beaten
2 c. sugar
1/3 c. freshly squeezed lemon juice
2-3 drops pure lemon oil (optional)
1/2 tsp. baking powder
1/4 c. flour
Grated rind of 1 lemon (optional)

Mix first 3 ingredients using half of the True Lemon packet (optional). Using a pastry blender or two knives, cut in butter as you would when making pie crust until it resembles coarse crumbs.

Press crumb mixture into a 9 x 13 inch pan. Bake in a preheated 350°F oven for 15-20 minutes.

Combine the remaining ingredients (and the other half of the True Lemon packet) to make the lemon filling.

Pour over crust and bake for 25 minutes at 350°F or until lightly golden on top. Sprinkle with powdered sugar when cool.

Cut into bars.

Outstanding.. I added a lot more lemon zest as I did not have True Lemon (Canada). I also grated lemon into the crust dough. Turned out wonderful and got rave reviews from all. I would make it again but in a slightly smaller pan as it did seem a bit thin to me but that's personal preference

Someone in your local supermarket will know where they keep the True Lemon boxes. You could try the sugar and baking section.

I usually find it where the powdered drinks are shelved.

I have never heard of True Lemon either, but a quick search led me to their website (www.truelemon.com) and they have a store locator which even tells you where in your local store the item can be found (well, for some of the stores).

And they also make True Orange and True Lime. I love this product and have been wishing for a real lime/lemon juice in powder form so that it can be used on other foods/recipes that would otherwise be ruined by a liquid juice. Might I suggest trying it on your popcorn (yum!). I know you all will have your favorite, creative recipes just waiting for this :)

I've been using a pack of True Lemon and True Lime together in about 28 oz. cold water for years. Its really good. The company is a small company with 18 employees. They are really good people. You can find their products usually in the baking aisle in a yellow (Lemon) green (Lime) boxes of 32 little packs.

 Judy (Washington) replies:
I found True Lemon powder at Amazon.com in both a box of 32 packets and a small shaker bottle as well. There were also other flavors available too, True Orange, True Grapefruit and a True Lime powder which is (was) great for rimming my margarita glasses when mixed with a little chili powder!. Then just happened to be shopping at a Green Tree dollar store near me and they had True Lemon in a box of 12 packets for $1.00!

Excellent recipe for lemon bars. Much better than recipes which don't call for flour in the top batter. Omitted lemon in the base. Great texture. Easy.
