CORN CASSEROLE 
2 lbs. ground meat
1 can whole kernel corn, drained
1/2 c. chopped jalapeno peppers
1 egg
1 c. bread crumbs
1 med. onion, chopped
1 med. bell pepper, chopped
1 pkg. Cheddar cheese (optional)

Preheat oven to 350 degrees.

1. Starting at the top, combine all ingredients (mixing well after each addition) except Cheddar cheese.

2. Season to taste.

3. Pour mixture into a casserole dish. Top with Cheddar cheese.

4. Bake for 30-45 minutes.
