D.'S CASSEROLE 
2 - 2 1/2 lb. ground chuck
2 or more tbsp. butter
1 (8 oz.) pkg. egg noodles, or more
10-12 shallots
4 cloves garlic (opt.)
2-3 lg. white onions
2 (3 oz.) pkgs. cream cheese
2 sm. cartons sour cream
1-2 pkgs. Velveeta (mild jalapeno cheese)
1-2 bell peppers
2 cans cream of mushroom soup

Brown meat in olive oil or Pam; set aside. Cut up and cook in butter the onions, garlic, shallots and bell peppers.

Mix well together the onions, garlic, shallots, bell pepper, cream of mushroom soup, sour cream, cream cheese (softened), ground chuck and noodles (cook noodles as directed on package).

Season to your taste with any season ingredients. I use salt and coarse ground black pepper.

Put in greased casserole dish (olive oil or Pam). Be sure to cover dish. Sprinkle Velveeta mild cheese on top of casserole 5 minutes before it's done. Bake for 30 to 45 minutes at 325 to 350 degrees.
