PEAS AND CARROT SALAD 
2 pkgs. frozen peas and carrots
1 sm. onion, diced small
2 c. American (or sharp) cheese, cut in sm. cubes
Salt and pepper to taste
Mayonnaise to moisten

Cook peas and carrots. Drain and cool. Add onion, cheese and mayonnaise. Mix well and refrigerate for 1 hour before serving.
