BEAN SPROUT SALAD 
1 lb. bean sprouts
2 tbsp. soy sauce
1 tsp. sugar
1/4 tsp. sesame oil

Blanch bean sprouts and place in a bowl. Mix soy sauce, sugar, and sesame oil. Pour over sprouts, toss gently and refrigerate for 15 minutes.

COMMENTARY: One may add chopped watercress (about 1 cup), and/or slivered chicken, ham, or roast pork. If meat is added, skip the sugar and substitute one teaspoon of salt.
