BEAN SPROUT & CUCUMBER SALAD 
16 oz. bean sprouts
1/2 cucumber

SAUCE:

1 tbsp. soy sauce
1 tbsp. vinegar
1 1/2 tsp. sesame oil
1 tsp. sugar

Wash bean sprouts. Thinly shred cucumber. Pour boiling water over bean sprouts and drain well. Mix sauce ingredients. Place cucumber or serving dish and spread bean sprouts on top. Pour sauce over top just before serving.
