ORANGE OATMEAL BREAD 
3/4 c. plus 2 tbsp. sugar
1 orange, peeled, sliced, and sectioned
1 1/2 c. flour
1 tsp. salt
4 1/2 tsp. baking powder
1/4 tsp. baking soda
1 c. old fashioned rolled oats
2 tbsp. butter, melted
2 eggs, lightly beaten
2/3 c. orange juice, preferably fresh
2 tbsp. grated orange rind

Sprinkle 2 tablespoons of the sugar over orange pieces. Set aside. Combine the flour, salt, powder, soda, and remaining sugar in a bowl. Add oats. Combine melted butter, eggs, juice, rind, and orange pieces and add to the dry ingredients, stirring until just blended. Pour into a greased and floured 9 x 5 loaf pan and bake for 1 hour at 350 degrees. Cool on a rack.
