SWISS STEAK 
2 lbs. Swiss steak
2 tbsp. shortening
1/8 tsp. pepper
1 lg. onion
10 oz. frozen peas and carrots
1/4 c. flour
1 tsp. salt
4 oz. mushrooms
1 can cream of tomato soup
Water as needed

Cut steak into 6 pieces. Coat with flour and brown on both sides in a frying pan. Sprinkle with salt and pepper. Add mushrooms and liquid, onion and soup. Cover tightly and simmer on top of range in electric skillet at 350 degrees for 2 hours, adding water as needed. Add vegetables during last 20 minutes of cooking. Serve with hashed brown potatoes. 6 servings.
