SWISS STEAK 
1 1/2 lb. round or rump steak
3 lg. onions, sliced thin
2 tbsp. flour
1 tsp. salt
1 stalk diced celery
1/8 tsp. pepper
1 clove minced garlic
2 tbsp. salad oil
1 1/2 c. canned tomatoes

Trim fat from meat. Combine flour, salt and pepper. Pound meat with flour mixture. Heat oil in Dutch oven over medium heat. Brown meat well on both sides about 15 minutes. Add the rest of ingredients, stir well. Simmer covered 2-2 1/2 hours or until tender.
