COOKED MAYONNAISE | |
Here is an old Southern recipe for a cooked mayonnaise - a useful convenience that can be quickly made at home with pantry items, and you won't need to worry about using raw eggs. 1 cup vinegar 1 cup water 3/4 cup flour 1/2 cup vegetable oil 4 egg yolks 1 tsp. salt 1/8 tsp. cayenne pepper Mix the flour into a paste with part of the water so that it is still thin enough to put through a fine strainer. Add the egg yolks, then strain the mixture. Put vinegar, oil, salt, pepper, and remaining water into a saucepan. Bring to a boil, then pour slowly over the flour and eggs. Return to a double boiler and cook until quite thick. Do not allow to boil or the mayonnaise will curdle. Keep just below the boiling point. Allow to cool before using. This makes nearly a quart. Can be used over potato salad instead of real mayonnaise or anywhere real mayonnaise is normally used. Submitted by: CM |
