CREOLE MAYONNAISE 
1/2 cup real mayonnaise
2 celery stalk
1/2 tsp. paprika
1 tsp. freshly squeezed lemon juice
4 sour gherkins
2 cloves garlic
1 small white boiling onion
1/4 tsp. salt
1 tbsp. fresh parsley
1/4 tsp. thyme or basil (optional)
pinch of cayenne
1 tbsp. light olive oil or vegetable oil
1/2 green bell pepper, seeded and cored
1 1/2 Tablespoon of Above

Process all ingredients in a blender or food processor until very smooth.

Serve immediately or store in refrigerator for up to 1 week.

Goes well with fish, or use to top ripe tomato halves served on a bed of crisp romaine or buttercrunch lettuce leaves.
