BONELESS BREAST OF CHICKEN AND
VA. HAM
 
1/3 c. flour
1/3 c. fine cracker crumbs
4 lg. chicken breasts, boned
Salt and white pepper to taste
2 tbsp. butter
2 tbsp. vegetable oil
4 thin slices Virginia ham

GRAPE SAUCE:

1 c. chicken broth
1/2 c. orange juice
3/4 c. seedless grapes
1/4 c. raisins
3/4 tsp. sugar
1/8 tsp. nutmeg
1/8 tsp. cinnamon
1 tbsp. cornstarch

CHICKEN: Combine the flour and cracker crumbs, season the chicken breasts with salt and white pepper, and roll then in the mixture. Saute until golden brown. Place breast on ham slice. Coat with sauce and serve.

GRAPE SAUCE: Combine the first 7 ingredients and bring to a boil. Thicken the sauce with the cornstarch dissolved in a little cold water.
