ORANGE SPINACH SALAD 
10 oz. fresh spinach, washed and drained
1 iceberg or leaf lettuce
2 tbsp. finely chopped onion/scallions
2 tbsp. diced sweet pepper (red or orange)
2 lg. oranges, peeled and sectioned
1 cucumber, shredded or thinly sliced
Honey Dill Dressing

Tear spinach leaf and lettuce into bite-size pieces. Add onion, sweet pepper, oranges and cucumber. Toss with dressing before serving.

HONEY DILL DRESSING:

3/4 c. mayonnaise
2 tbsp. honey
1 tbsp. lemon juice
1 tbsp. dill weed

Combine ingredients in a bowl and whisk mix ingredients. Chill thoroughly. Whisk just before serving.
