SPINACH - ORANGE SALAD 
4 c. torn spinach
11 oz. can mandarin oranges, drained
1/2 c. sliced red onion
2 tbsp. slivered almonds
3 tbsp. white vinegar
2 tbsp. oil
1 tbsp. honey
1/2 tsp. salt

Wash and dry spinach then lace into pieces. Add orange and onion, toss. Mix vinegar, oil, honey, salt and pepper. Pour over spinach. Sprinkle nuts over top. Serves 4.
