ORANGE-ONION SPINACH SALAD 
16 spinach leaves, washed and dried
1 can mandarin oranges
Almond slivers
4 tsp. olive oil
1/3 c. red wine vinegar
1 sm. red onion, sliced and separated into rings

Add each ingredient to a large bowl, except oil and vinegar. Mix oil and vinegar in a small jar and pour over the spinach salad. Toss and serve. Serves 4-6.
