SPINACH - ORANGE SALAD 
Spinach
Mandarin oranges, drained
Slivered almonds

DRESSING:

1/2 c. olive oil
1/2 c. salad oil
1/2 c. white tarragon vinegar
1/2 tsp. dried tarragon
1 tsp. sugar
1/2 tsp. Dijon mustard
Salt and pepper to taste

Wash and dry spinach. Mix just enough dressing on spinach to coat leaves. (I do it in a big plastic bag or large bowl.) Put spinach on plate. Add 3 or 4 mandarin orange slices. Sprinkle with slivered almonds.

DRESSING: Add all ingredients together in blender. Blend and refrigerate for flavor blending.
