On salad plates arrange: Thinly sliced cucumbers Sliced avocados Small orange slices (mandarins work well) Sliced scallions

DRESSING:

To be poured on just before serving: 1/2 tsp. grated orange peel 1/4 c. orange juice 1 tbsp. wine vinegar 1 tbsp. lemon juice

Combine ingredients and shake until mixed.
