FRIED RABBIT OR SQUIRREL | |
2 young rabbits or squirrels (dressed) 1/2 c. flour (season with 1 tsp. salt and pepper) 1/4 c. bacon grease or shortening Cut rabbit or squirrel into serving pieces. Rinse in cold water, drain. Put seasoned flour in plastic or paper bag. Heat bacon grease in heavy skillet over medium-high heat until hot, but do not allow it to smoke. Shake 4 or 5 pieces of meat in the flour mixture at a time. Brown all pieces lightly, on both sides, in the hot bacon grease. Reduce heat, cover and (turning occasionally) simmer until tender. |
