FRIED RICE 
2 tbsp. chopped onion
1/2 c. (4 oz. can) drained mushroom stems & pieces
1/2 c. finely chopped chicken, pork or ham
2 tbsp. cooking oil
4 c. cold cooked rice
2 tbsp. soy sauce
1 egg, well beaten
2 tbsp. minced parsley
1/8 tsp. pepper

In fry pan, cook onion, mushrooms and chicken in oil until tender. Add rice and soy sauce. Cook over low heat 5 to 10 minutes, occasionally stirring with a fork. Add egg, parsley and pepper. Cook over low heat 5 minutes, stirring constantly. If desired, serve with additional soy sauce. 6 to 8 servings.
