CHEESY ROTEL DIP 
1 (2 lb.) pkg. Velveeta cheese, cut into cubes
2 (10 oz. ea.) cans Rotel diced tomatoes
1 (1 lb.) pkg. ground beef or ground turkey
1/2 cup milk (I use 2%)
1 env. mild taco seasoning
1 bag tortilla chips or nacho cheesier Doritos, for dipping

Cut up the Velveeta into smaller cubes.

In a 2-quart Crock-Pot or stove-top pot, combine cheese and milk with both cans of Rotel. Allow the ingredients to melt and simmer on low.

Meanwhile in a skillet brown the ground beef (or turkey). Drain the fat and then add the taco seasoning.

Once the cheese mixture has started to melt, add the meat mixture.

Allow dip to simmer for an additional 10 to 15 minutes and serve with tortilla chips.
