TOMATO CURRY AND ORANGE BUTTER 
2 c. (4 sticks) sweet butter, softened
1 tsp. salt
2 tbsp. good tomato puree
1 tsp. finely grated orange rind
1 heaping tsp. mild Madras curry powder

Mix all the ingredients together in a blender. Rub through a fine meshed sieve. Put into wax or plastic containers and chill until needed in either the freezer or the refrigerator. Before using, allow the butter to come to room temperature.
