TOMATO WITH BEEF CURRY 
1 lb. cubed beef or lamb
1 lg. onion, finely sliced
2 lbs. fresh tomatoes, chopped
1/2 tsp. tumeric
1/8 tsp. black pepper
Salt to taste
1/2 tsp. red pepper
2 tsp. fresh ground ginger
2 tsp. fresh ground garlic
1/2 c. oil
Fresh coriander leaves

Fry onions until golden brown. Add ginger and garlic. Fry for 2 to 3 minutes. Then add tumeric, black pepper, red pepper, salt. Fry for 2 or 3 minutes more, then add washed meat and fry about 5 minutes and then leave to simmer until tender. Now add chopped tomatoes and cook until it becomes the consistency of spaghetti sauce. Garnish with chopped coriander leaves. Serve over rice.
