BEEF CURRY | |
10 oz. boneless chuck steak, cut in 1-inch cubes 2 tsp. vegetable oil 1 c. chopped onions 1 garlic clove, minced 1 to 1 1/2 tsp. curry powder 3/4 c. water 1/4 c. tomato sauce 1 pkg. instant beef broth and seasoning mix 1/2 c. frozen peas dash of salt On rack in broiling pan, broil beef cubes, turning to brown all sides until rare, about 6 minutes. Set aside. In 1 1/2-quart saucepan, heat oil. Add onions and garlic and sauté until onions are translucent. Add beef and curry powder and stir to combine. Stir in water, tomato sauce and broth mix. Cover and let simmer, stirring occasionally for about 1 hour. Add peas and salt and cook for 5 minutes longer. |
