CURRY TOMATOES 
4 med. to lg. tomatoes, about 1 1/2 lbs.
2 tbsp. butter, softened
1 tbsp. dark brown sugar
1 tsp. curry powder
1/4 tsp. salt

Rinse tomatoes and cut out stem ends; slice each in half crosswise; if any of the halves do not stand straight when placed cut side up, cut a very thin slice from the bottom. Place well apart on a foil lined (for easy clean up) shallow baking pan. Stir together the remaining ingredients; top tomatoes with it. Bake in preheated 400 degrees oven just until hot through and sugar has melted, about 10 minutes (makes 4 servings). Good with pork or lamb chops.
