ALL OCCASION CHILI 
1 lb. ground chuck
1 onion, chopped
3 ribs celery, chopped
1 green pepper, chopped
1/8 tsp. thyme
1/8 tsp. rosemary
1/8 tsp. oregano
1 (32 oz.) can red kidney beans
1 (32 oz.) can tomato juice
1/2 c. tomato ketchup
2 tbsp. brown sugar
2 tbsp. cider vinegar
4 tbsp. chili powder

Place chuck, onion, celery, green pepper and herbs in 6 quart kettle over medium heat until meat is completely cooked. Add everything else and lower heat to simmer for 1/2 hour to 45 minutes. Stir often. Add more chili powder to taste.
