“MAPLE-APPLE CHICKEN BREASTS” IS IN:

MAPLE-APPLE CHICKEN BREASTS 
4 skinless, boneless chicken breast halves
1/2 cup, low-sugar apple juice
2 tbsp. maple syrup
1/2 tsp. fresh thyme leaves
Cooking spray
1 tbsp. "I can't believe it's not butter" butter
2 large Granny Smith apples, peeled, cored, quartered and sliced
1/4 tsp salt
1/4 tsp pepper
1/8 tsp cinnamon
Thyme sprigs for garnish

Combine chicken and next 3 ingredients in large zip-lock bag, seal. Marinate chicken in refrigerator for 30 minutes.

Remove chicken from marinade, reserving marinade. Heat a large skillet over medium-high heat, coat pan with cooking spray. Add chicken, cook for 5 minutes each side. Remove chicken from pan, set aside.

Melt butter in skillet over medium-high heat. Add apples, sauté 4 minutes. Add reserved marinade, salt, pepper and cinnamon.

Bring to boil, reduce heat, simmer 4 minutes or until reduced slightly. Return chicken to pan, cook 3 minutes or until heated through.

Garnish with thyme sprigs.

The flavors of this dish are incredible. I serve this with a salad of mixed greens and apple slices.

We had this for dinner tonight. It was OK, but I think I could have achieved pretty much the same effect by pouring a can of apple pie filling over sautéed chicken.

Great recipe trying it tonight, and using this as a base, thank you. To the above comment, apple pie filling is very high sugar, which is an intense amount of unnecessary sweetness and would produce a flavor far from the above recipe. Spices are very important.

Used Mango juice as I didn't have apple. It turned out amazing, the smell plus the taste were amazing. Will be making this again for sure. Served it with grilled veggies. Made a great dinner.

This was amazing! Next time I will double the marinade. I would like to drizzle some on my chicken and put it over rice or noodles. It tasted like ascalloped apples to me and I love them!
