CREAMED TUNA ON TOAST 
2 tbsp. butter
3 tbsp. flour
2 c. rich milk
1 tsp. salt (or to taste)
1/4 tsp. pepper
1 c. flaked tuna, canned

Melt butter and blend in flour; add milk and stir while cooking until mixture is thick and smooth. Add salt and pepper and canned tuna. Serve hot on squares of toast. This recipe may also be used with chipped beef.

My mom used to make this for me when I was a kid except she added mustard at the end of cooking. I double the recipe for my family of four because most of us eat 2 pieces of toast and like a lot of the creamed mixture. My kids love this just like I did. My momma used to make this when I was a kid back in the 50's. It is, like others have said, a comfort food. It was a meal that was cost effective and went a ways to feed our family of six. Been missing my momma something terrible (gone since 2006) and a meal like this is comfort food in lots of ways

I've been sick with some stomach problems for the last week. I've been trying to eating things that are easy on the stomach and digestive track. Well I asked my wife to make me Creamed Tuna Over Toast like my mom made for me when I was sick as a kid. She used canned white meat chicken from Costco. Good recipe however should be 3/4 tsp salt AND add a slice of melted cheese on toast before covering with sauce and garnish with sliced boiled egg on top!

Remember having this a lot as a kid. (This, and beefaroni!). Instead of having it over toast, we had it over a pile of broken up Ritz crackers. Wasn't too bad!
