BUTTERMILK WAFFLES 
2 c. sifted flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
4 eggs, separated
1/2 c. melted butter

Start heating waffle iron. Sift together flour, baking powder, baking soda and salt. Combine milk and egg yolks. Beat egg whites until stiff. Add milk egg yolk mixture to dry ingredients. Beat with electric mixer just enough to moisten dry ingredients. Stir in slightly cooled butter. Fold in egg whites, leaving little fluffs of them showing in batter. Pour batter from pitcher onto center of lower grid until it spread to about 1" from edges. Gently close lid at once; do not open during baking. Bake until steaming stops or signal light shows waffle is done. Loosen waffle with fork and lift it from grid. Place on warm place. Reheat waffle iron before pouring on more batter. (I grease grids frequently.) This is excellent for Belgium waffles.

Very good! I am always trying new recipes...but this has made it into my permanent book of recipes...I added a couple of tsps of mix of sugar and cinnamon at the end as I wanted to use it up...gave it just a little spike of flavor and sweetness...

This is a great batter. When prepared, my batter was closer to fluff than batter. I could not easily pour it so I scooped it from the mixing bowl. The amount of "fluff" depends on how well you whip the egg whites. I used unsalted butter and increased the salt to 1 1/2 tsp. Kosher salt. Next time I will increase it to two tsp. Set at 90% of maximum heat, my griddle produced slightly crispy waffles with a nice sponge-like look under the crust. The next time I make them, I am going to add a bit of vanilla.

OK, I NEVER review stuff but felt compelled after making this recipe - this made perfect waffles (I did add vanilla). Crispy evenly golden outside, tender inside. I've been making waffles for a few years and have never been fully satisfied with the result. Until now. This one is bookmarked, it's a keeper. I can stop searching!

It's perfect just the way it is! You can always add maple syrup, which I did, and with strawberries - MMMM I made a big batch and put them in the frig to toast up when I feel like having one.
