NOBBY APPLE CAKE 
3 tbsp. butter, softened
1 c. white sugar
1 egg
1 c. plus 2 tbsp. all-purpose flour, divided
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
3 c. peeled, diced cooking apples
1/4 c. chopped pecans
Whipped cream or ice cream (optional)

Cream butter, gradually add sugar, beating well. Add egg, beat well. Combine 3/4 cup flour, baking powder, salt and spices; add to creamed mixture; beat at low speed with mixer until just blended. Stir in vanilla. Batter will be thick.

Dredge apples and pecan with remaining 1/4 cup plus 2 tablespoons flour; fold into batter. Spoon batter into greased and floured 8 inch square cake pan. Bake at 350 degrees 45 to 50 minutes until wood pick in center tests clean. Serve warm topped with whipped cream or ice cream.
