PENNSYLVANIA APPLE CAKE 
1 c. salad oil
3 eggs
2 c. sugar
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. chopped nuts
4 c. peeled sliced apples

Beat oil and eggs until frothy. Add sugar and vanilla; beat again. Sift together flour, baking soda, cinnamon and salt. Blend into egg mixture. Fold in nuts and apples. Bake in 350 degree oven for 1 hour. Spread with icing as it comes from oven.

ICING:

1 1/2 tbsp. butter
3 c. powdered sugar
1 tsp. vanilla
3 oz. cream cheese

Beat together.
