FRESH APPLE CAKE 
2 eggs
1 1/2 c. cooking oil
2 c. sugar
1 tsp. vanilla
3 c. flour
1 1/2 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. salt
1 c. nuts, chopped
3 c. fresh grated cooking apples

ICING:

1 can Eagle Brand milk
1/2 c. nuts, chopped
1 c. coconut

In a large mixing bowl, mix the cooking oil, sugar, eggs and vanilla until well mixed. Add the sifted dry ingredients, mixing well. Stir in the nuts and grated apple. Pour into a prepared bundt or angel food cake pan. Bake at 350 degrees for an hour.

ICING: (This may be started before mixing the cake.) Place on unopened can of Eagle Brand milk in a deep saucepan, cover several inches with water and bring to a boil, slowly. Boil on very low heat for 3 hours. (Keep water over can.) Cool slightly; add nuts and coconut; spread on cake.
