APPLE CAKE WITH ICING 
2 c. sugar
1 tsp. salt
2 tsp. baking soda
2 tsp. vanilla
1 c. nuts, chopped
4 c. apples, finely chopped
2 c. flour
2 tsp. cinnamon
1/2 c. oil
2 eggs beaten

Peel and finely chop (I use the food processor) apples. Put apples in a bowl and sprinkle with sugar. Sift flour, soda, salt and cinnamon. Add to apple/sugar mixture. Beat eggs, add oil and vanilla, then add to apple mixture. Add nuts and mix. Bake in greased 9x13 inch pan at 350 degrees for 40-45 minutes and cool. Serves 12. Note: Use 1/2 of ingredients and bake in 8 inch pan.

ICING:

3 tbsp. butter, melted
1 (8 oz.) pkg. cream cheese, softened
1 1/2 c. confectioners' sugar

Mix all ingredients with electric mixer until light and fluffy. Frost cooled cake and cut into squares.
