ITALIAN SPINACH PIE | |
1 pastry shell 1 1/2 c. frozen spinach, defrosted 4 tbsp. butter Salt & pepper to taste 1/2 c. heavy cream 3 eggs, slightly beaten 1 nutmeg, grated 1/2 c. grated Parmesan cheese 1/2 lb. ricotta cheese Cook spinach with butter, salt and pepper; drain thoroughly. To spinach, add ricotta cheese, eggs, Parmesan, cream and nutmeg to taste. Pour mixture into pastry shell and bake in a moderate oven (375 degrees) for 30 minutes or until the crust is brown and cheese mixture is set. |
