ITALIAN SPINACH PIE | |
1 pkg. frozen chopped spinach 1 1/2 c. Ricotta cheese 2 eggs, lg. 1 c. mozzarella cheese 4 tbsp. grated Parmesan cheese 2 tbsp. onion, finely chopped 3 slices, thinly sliced ham 1 8" frozen pastry shell, optional Preheat oven to 350 degrees. Cook pastry shell according to package directions if crust is desired. Cook frozen spinach 5 minutes in boiling salted water, remove and drain well. Finely chop 2 tablespoons onion and take mozzarella cheese and make 1 cup of small cubes. In a large bowl mix together all ingredients. Turn into pie shell or a lightly greased 8 inch glass pie plate and cook for 35 minutes, or until golden brown on top. Serve hot or cold. |
