ITALIAN SPINACH CASSEROLE 
2 (10 oz.) boxes chopped spinach
2 c. Ricotta cheese
1 c. bread crumbs
2 eggs, lightly beaten
1 c. sour cream
1/2 c. spaghetti sauce
1 lb. Mozzarella cheese, sliced
1 tsp. chopped sweet basil
1/2 c. Parmesan cheese

Preheat oven to 350 degrees. Cook spinach; drain. Combine with ricotta cheese, bread crumbs and eggs in a large bowl. Stir until stiff. Pour mixture into buttered 9"x13" dish. Spread sour cream on top. Pour on a layer of sauce, using most but not all. Cover with layer of Mozzarella cheese slices. Spread on rest of sauce. Sprinkle sweet basil and Parmesan cheese. Bake 30 minutes, uncovered. Cut in small squares.
