SAVORY ITALIAN CASSEROLE | |
Half of a round Rustic bread, cubed (about 3 cups) 16 ounces tomato pasta sauce 2 cups shredded melty cheese 16 ounces water 4 large eggs 10 to 16 ounces of spinach, chopped 1 can green beans ¾ to 1 pound hot Italian sausage Sauté the sausage till browned, then drain. Add spinach and cook until well wilted. Add green beans. Toss with bread cubes and place in greased 9” x 9 casserole pan. Mix water pasta sauce and eggs and pour over casserole mixture. Let stand for at least 30 minutes for the bread to soak up the custard mixture. Preheat oven to 350°F. Bake 25 to 30 minutes or until golden and bubbling. Let sit 10 minutes before serving. With a nice green salad, this a a meal in its own. Serves 3 to 4 and cold be doubled very easily. Great cold, on the rare occasion that there are left overs! Submitted by: Rev. Theresa Sutton |
