CHOCOLATE CARAMELS | |
3 (1 oz. ea.) sq. unsweetened chocolate 1 (14 oz.) can Eagle Brand sweetened condensed milk 1/2 cup corn syrup (Karo) dash of salt 1 tsp. vanilla 1/2 cup chopped nut meats (optional) Melt chocolate in heavy, shallow saucepan. Add sweetened condensed milk, corn syrup, and salt. Cook slowly, stirring constantly, over low heat until mixture forms firm ball when tested in cold water (244-248°F on candy thermometer), about 20 minutes. Remove from heat. Add vanilla and nut meats. Pour at once into buttered pan (8x8-inches). When cold, cut into squares. Remove from pan. Cooks Note: Use of a candy thermometer is recommended. Makes 1 1/4 pounds. |
