CHOCOLATE PANCAKES 
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar (less may be used, to taste)
1 cup milk
4 teaspoon butter, melted
2 eggs
4-6 teaspoons cocoa

Note: For fluffy pancakes, separate the egg yolks from the egg whites. Beat the whites until they hold stiff peaks and fold gently into the batter.

Combine dry ingredients. Add remaining ingredients and stir only until mixed.

Preheat a non-stick skillet until sizzling hot (a drop of water will "dance" on the surface). Brush lightly with oil or butter.

Pour pancake batter onto hot skillet; flip once when bubbles begin to form along edges. When lightly browned on both sides, remove pancake using a spatula and stack with pats of butter between each pancake. Keep warm in oven until ready to serve. Serve with vanilla syrup, if desired.

These freeze well and can be reheated in the microwave for a quick breakfast.

Vanilla Syrup:

1/2 cup butter, melted
1 1/2 cups powdered sugar
1 teaspoon vanilla

Mix well. Pour over hot pancakes just before serving.

The little girl I babysit wanted some pancakes and we were out of bisquick so when I found this it sounded pretty good!! The taste was great! But they werent very fluffy.... At all. But I think that was my mistake! ~ I didn't whip the egg whites and I think that would have made a big difference!! Overall great taste!!

I did w/ 4 egg whites, added a bit more salt and less sugar by 1/4 cup and just sprinkled w/ sugar. Yum.

It really helps if you mix brown sugar with the sugar in the pancakes. Also if you put milk and heat up the icing for 15 seconds. Its really! Good!

This recipe is amazing! I used the egg white and the pancakes were super fluffy and delicious! I also had to add about half a cup more of milk because my batter was super thick. The syrup also compliments the pancakes so well. Love, love, love this!

Made these this morning for my family. We are just now coming out of a diabetic coma - LOL! Seriously though, these were amazing! I added mini chocolate chips and it was a Choco-holics dream! Now I have a pretty rich sweet tooth, but these even made me stop at two. And I couldn't even think about adding syrup. I'll try again, with maybe about half the sugar next time. Thanks so much for sharing!

These have become our official birthday breakfast for both of our boys. These pancakes themselves are not overly sweet. I like to use 5 tbsp. Cocoa and just a bit less sugar than called for. I also undercook them just a bit and thin the syrup with hot water just to create a runnier syrup consistency rather than frosting. They are wonderful and definitely make a special breakfast!
